Easy oatmeal cookies

Ladies, preheat your oven because World Baking Day is coming closer. On Sunday , I’ll be enjoying the Italian sun, but I think the Belgian weather will be perfect for an afternoon in the kitchen. #oops

To celebrate World Baking Day, I wanted to make something…

  1. sweet and delicious
  2. easy (I’m not a kitchen queen)
  3. healthy (so I feel less guilty)

While searching for inspiration, I bumped into an easy oatmeal cookie recipe by chef Cheeseburger a.k.a. Steffi. If you want to make these crunchy cookies yourself, make sure you put the following ingredients on your grocery list:

  • 4 bananas
  • 140 gr oatmeal
  • 100 gr dark chocolate (85%)

I always like to add some extra’s… you know, to own the recipe 😉

  • 2 tsp chia
  • 2 tsp coconut powder
  • 3 tsp cacao nibs

How to make those delish cookies

  1. cut your bananas in small pieces
  2. do the same with the chocolate
  3. add the oatmeal
  4. make small cookies
  5. put them in a preheated oven (170°) for 20 minutes

Note: make sure you don’t try them immediately because the melted chocolate can be extremely hot when the cookies come out of the oven! Instead, look for something to decorate them, like I did with the coconut powder. By the time you found something, there ready to serve 😉

On World Baking Day, you can also remind people who matter, how much you care. Do something unexpected, bake them cookies or a cake. Enjoy it and don’t forget to share your tasty result!
